Easy (and cheap) Pizza!
This is a pizza I created with low funds, haha. I wasn't sure how it was going to taste, but I like to experiment. So I made it, and I love it. I now make it on a regular basis. It's really good and soooo easy to make. If you have children you could also let them help. So anyway here it is....
EASY PIZZA-
Pkg. whole wheat pizza crusts (2 comes in one pack)
jar of pizza sauce
Pepperoni ( I used turkey pepperoni)
Any kind of sandwich meat
Mozzarella cheese
Cheddar cheese
1. I start off with whole wheat pizza crusts I buy from Wal-Mart. I think the brand is Mama Mary's. The pizza crusts come in regular and wheat. I buy wheat because my husband is diabetic. I pour a little oil on the crust and spread it all over the crust with a basting brush.
2. I then spread pizza sauce all over the crust, and then cover that with finely shredded mozzarella cheese.
3. Next comes the pepperoni part (your children could help with this part). Cover the pizza in pepperoni.
4. Now here is what most people think is strange. I chop up sandwich meat and put it on top of the pepperoni. I have used ham, chicken, and turkey. Use whatever you have. Top the meat with shredded cheddar cheese.
5. Cook the pizza at 425 degrees for 7-10 minutes. So yummy and easy. I know this will be a winner recipe in your house. :)

Easy Cheesy Potato Casserole
I found this recipe the other while looking through a magazine. I made it and I loved it! Such an easy casserole to make and so yummy, too! I know you will love it, too!
EASY CHEESY POTATO CASSEROLE
1 (20 oz.) pkg. hash browns
1 & 1/2 cups (6oz) shredded Mexican four-cheese blend
1 can cream of mushroom soup
1 (8oz) container sour cream
1/3 cup chopped fresh chives
1 garlic clove
1/2 tsp. salt
1/2 tsp. freshly ground pepper
1. Preheat oven to 350 degrees. Cook hash browns in a lightly greased large non-stick skillet over medium heat, stirring constantly for 12 minutes or until golden brown.
2. Stir together hash browns (drain the hash browns onto a paper towel to drain the excess grease. I didn't do this, and it was a little too oily than I would have liked), 1 cup shredded cheese (I used the Fiesta Blend cheese), and next 6 ingredients. (I didn't put the chives in because I didn't have any, I used garlic powder instead of a garlic clove, and didn't put the pepper in) Spoon mixture into a lightly greased 8-inch square baking dish, and sprinkle with remaining 1/2 cup cheese.
3. Bake at 350 degrees for 40-45 minutes or until edges are lightly browned. Let stand 5 minutes before serving. (I thought that 40-45 minutes might be a little long for this casserole so I set the timer for 30 minutes. After 30 minutes the edges were lightly browned and bubbly. So I want to caution you to check it before it at 30 minutes)

Ham, Broccoli and Potato Soup
Hello! I am sure you might be wondering where I have been...to tell you the truth I have been quite busy with the holidays, starting school, and etc. But I am back! With some yummy recipes!!! :D Today I want to share a new recipe with you that my dear friend, Allison shared with me- Ham, Broccoli and Potato Soup! It's absolutely wonderful! And perfect on a cold day! :) So without further delay...here it is...ENJOY! :D
HAM, BROCCOLI and POTATO SOUP
1/4 cup butter
3 cups frozen hash browns
1 cup chopped onion
3 Tbsp flour
32 oz. chicken broth
2 cups milk
2 cups fozen broccoli, thawed
8 oz. pkg. cubed ham
salt and pepper to taste
8 oz. pkg. cream cheese
(I forgot to take pictures of all the steps so all you get to see is the finished product)
1. Melt butter in stock pot over medium heat. Add hash browns, onion, and garlic. (I used a whole bag of hash browns, onion powder and garlic powder)- Cook for 5 minutes or until tender. (If you use a whole bag of hash browns like I did, use more butter or the hash browns tend to start sticking to the bottom of the pot)
2. Add flour and cook for 2 minutes, stirring constantly.
3. Stir in broth and milk and cook for 5 minutes. (I didn't have 32 oz. of broth as the recipe calls for so I just put in a little extra milk)
4.Add broccoli, ham, salt and pepper. Cook for 10 minutes, stirring frequently.
5. Add cream cheese, stirring until melted.
Such a simple recipe yet sooo delicious!

Chicken A La Creme
Hello everyone! Here I am finally getting around to posting another recipe. Sorry I have not posted it sooner. This time the recipe is "Chicken A La Creme". It is also delicious! Try it! I guarantee you won't be disappointed. :)
Chicken A La Creme-
1/4 cup butter
1 & 1/2 pounds chicken breast or strips
salt and pepper to taste
1 pint heavy cream
I used boneless chicken breasts, and cut them up into little strips.
Season chicken tenders with salt and pepper. Here is the chicken after I cut it up, and put salt and pepper on them.
Melt half of the butter in a skillet over medium-high heat, and saute the chicken until golden brown on all sides, about 10 minutes. Here is the chicken when I first put them in.
This is what the chicken looks like after browned.
Add the remaining butter, reduce heat to medium, and cook for 5 more minutes.
Pour the heavy cream into the skillet and simmer for 5 minutes, stirring occasionally until sauce has thickened and chicken is cooked through.
And here is the finished result! I served the chicken over brown rice, and the sides were fried squash and butter peas. It was delicious!
Here is a closer look at the chicken that I served over rice.
Hope you have fun making this dish, and let me know what you think about it when you try it. As always I hope you have a blessed day!
God Bless,
Paige

BBQ Meatballs
Hello my dear friends! I am so glad you came by to look at my new blog, and I hope you will enjoy what you find here. I love to cook, and I love to try out new recipes. So I thought I would bring my love of cooking to you. As I try out new recipes or make very familiar ones I will bring them here for you to try out and enjoy as I have. Please tell me what you think about it because I would love your feedback. Critique it and let me know your opinions or if I need to change something to make it easier for you. Thank you for all your support! :)
The first recipe I have to post is a new one I tried out the other day, and I loved it. It is a keeper! The recipe is BBQ Meatballs, and I made more than what the recipe calls for. I doubled the recipe, and I would advise for larger families that they would need to do the same. This recipe doesn't call for a lot of ingredients so doubling it would be no problem. So I will not keep you waiting any longer... :)
BBQ Meatballs-
Meatballs:
1 & 1/2 lbs. ground beef
1/4 cup chopped onion
1/4 cup green pepper
1/4 cup rolled oats
1 egg beaten
Sauce:
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons mustard
Serves 4-6
First step- Combine first five ingredients for meatballs. Mix well. (This is what it looks like combined. I omitted the pepper for my husband.)
Second Step- Shape balls and brown in skillet. (Here are what the balls look like when you put them in your skillet)
Now here are the balls browned.
Third Step- Drain off fat. (Here they are after I drained them)
Fourth Step- Place in slow cooker.
Fifth Step- Mix sauce ingredients and pour over meatballs. (This is what the sauce looks like.)
And this is what it looks like when I poured the sauce over the meatballs in the slow cooker.
Cook for 4-6 hours on low. Serve them over hot noodles, rice, or mashed potatoes. (Here are the meatballs after cooking for several hours.)
And then this is your finished result. You can serve them with whatever you would like as I did here. They were delicious and I know your whole family will enjoy them! :)
